Ingredients
- 1 pound asparagus spears, washed and trimmed
- 1 tablespoon olive oil
- 1 tablespoon bacon fat
- 1 tablespoon basil pesto
- 2 cloves garlic, minced
- 4 slices bacon, cooked and chopped
- 1 ounce shredded mozzarella
- 1 ounce feta cheese, crumbled
- 2 tablespoons grated parmesan
- salt and pepper to taste
Instructions
- Preheat oven to 400F. Prepare a baking sheet by lining with parchment paper or a baking mat.
- In a small bowl, combine olive oil, bacon fat, pesto, garlic, salt, and pepper.
- Toss asparagus in oil mixture and spread in an even, single layer on baking sheet. Bake in preheated oven for 10 minutes.
- Top asparagus evenly with cheeses and chopped bacon. Return to oven and bake for an additional 10-12 minutes, or until cheese is melted and asparagus is cooked to desired doneness.
