Ingredients

  • 1 pound asparagus spears, washed and trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon bacon fat
  • 1 tablespoon basil pesto
  • 2 cloves garlic, minced
  • 4 slices bacon, cooked and chopped
  • 1 ounce shredded mozzarella
  • 1 ounce feta cheese, crumbled
  • 2 tablespoons grated parmesan
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400F. Prepare a baking sheet by lining with parchment paper or a baking mat.
  2. In a small bowl, combine olive oil, bacon fat, pesto, garlic, salt, and pepper.
  3. Toss asparagus in oil mixture and spread in an even, single layer on baking sheet. Bake in preheated oven for 10 minutes.
  4. Top asparagus evenly with cheeses and chopped bacon. Return to oven and bake for an additional 10-12 minutes, or until cheese is melted and asparagus is cooked to desired doneness.
