Keto Strawberry Vinaigrette

The oil obviously offers a dose of healthy fats, and the vinegar adds a lot of flavor with little to no carb content. The thinner consistency means that a little goes a long way, so your little side salad doesn’t accidentally turn into a 500 calorie indulgence. Best of all, they are super easy to make!

This super simple keto strawberry vinaigrette recipe starts with a base of olive oil, apple cider vinegar, and fresh (or thawed) strawberries. A little salt, pepper, and keto-friendly sweetener help to round out the flavor. To up the flavor even more, I like to add a little fresh basil too, but that’s totally optional.   • 6 tbsp olive oil
  • 6 tbsp apple cider vinegar
  • 6 ounces (170g) strawberries cleaned and trimmed
  • 1 tbsp granulated Lakanto Classic or sweetener to taste
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh basil loosely packed, optional

Instructions

  • Add all ingredients to a blender or food processor.
  • Pulse until smooth.
  • Taste and adjust salt/sweetener if desired.
  • Store refrigerated in a sealed container.

Notes

  • Because the berries in this keto strawberry vinaigrette recipe are pureed, it's a good use for slightly overripe berries that might otherwise go to waste.
  • Depending on the natural sweetness of the berries you use, you may want to use more or less sweetener.
