Keto Cilantro Lime Grilled Shrimp
Warmer weather means that it’s time to fire up the grill, which is great since grilling happens to be one of my favorite ways to cook shrimp. Unlike ribs and some other cuts of meat, which can take hours of indirect heat for tender and flavorful results, this keto grilled shrimp recipe only needs a few minutes on the grill.
The cilantro lime marinade ensures that the shrimp stays nice and juicy, while also adding some bright, fresh summer flavors. They don’t have a ton of fat content, but these keto shrimp skewers can be a good way to squeeze in some extra protein as well as the selenium, astaxanthin, B vitamins, and other nutrients found in shrimp.
Notes:
- This keto cilantro lime shrimp recipe works fine with either fresh or frozen shrimp. If using frozen, just allow them to marinate until thawed.
- Optionally, you can soak your skewers in water before adding the shrimp to prevent charring on the grill.
- These keto shrimp skewers can also be made on the stove using a grill pan, or in the oven under the broiler. Add 1/2t liquid smoke to the marinade if desired to add some of that smoky flavor.
