Keto Strawberry White Chocolate Chip Cookies
A lot of people think that keto means giving up all but the darkest of chocolate, but thanks to brands like ChocZero, that definitely isn’t the case. Not only can you have naturally sweetened milk and dark chocolate that won’t kick you out of ketosis, but you can even have white chocolate too! This opens up many more options for your low carb baking adventures, including these keto strawberry white chocolate chip cookies. The tartness of the dried strawberries is the perfect compliment to the creamy sweetness of the white chocolate.
As usual when shopping for keto ingredients, you’ll want to look for dried strawberries with no added sugar. Ideally, strawberries should be the only ingredient. If you can’t easily find them, you can also make your own! Just thinly slice strawberries and bake on a parchment paper lined pan at 200F for 2-3 hours, flipping halfway through. You’ll need about 5 ounces (140g) of strawberries to make enough dried berries for these keto strawberry white chocolate chip cookies.
With the berries and chocolate settled, the base of this cookie recipe is pretty simple. Rather than relying on flours, these keto strawberry white chocolate chip cookies use a combination of almond butter, peanut butter, and a little dairy butter. Naturally, this gives them a very buttery texture! I like to use Lakanto Golden to sweeten them, but you can use the low carb sweetener of your choice. Egg, baking powder, and a little coconut flour will perfect the texture, while vanilla, cinnamon, and a dash of salt help to round out the flavor.
Serve these low carb cookies up with your favorite low carb milk, like unsweetened macadamia milk!
